Some pepper jack cheese and spinach stuffed inside with the black beans would be even better but I didn't have either.
 
Peanut butter toast. No more money for groceries this month... Just gotta survive another couple days.
 
Leftovers!

The veggies were amazing fresh and pretty damn good the next day as well. 👍

Bruchetta Chicken

4 boneless skinless chicken breasts (I used a whole pack of breasts and just upped the ingredients slightly)

2 eggs

¼ cup flour

¼ cup shredded parmesan cheese

¼ cup crushed croutons (Garlic Texas Toast croutons = phenomenal)

2 tablespoons butter

2 tomatoes

2 tablespoons chopped basil

2 cloves garlic

Glass baking dish

To prepare:

Heat the oven to 375*

Crack 2 eggs and scramble in a bowl. And place ¼ cup flour (or a little more if you need it) in a separate bowl. Dip each breast first into egg and then into flour on each side. Place dipped breasts into a glass baking dish.

In a separate bowl, combine crushed croutons, parmesan cheese, and MELTED butter. Once mixed, place on top of each chicken breast. Once the oven is heated, place this dish in the oven for 45 minutes.

While the chicken cooks, in another bowl (I know…lots of bowls) add chopped tomato, basil, minced garlic, EVOO and salt and pepper to taste. After 45 minutes, pull out the baking dish and place this mixture on top of the almost-cooked chicken. Put back in the oven for another 7-10 minutes.

Fresh out of the Oven!

If you are worried about the chicken being fully cooked, the internal temperature of a breast should be 160*!

*** Our first attempt was VERY yummy! One improvement we thought of was to possibly pound the chicken to make it thinner. This may help it from getting dry and add to the flavor. But.. maybe that can be on your second try as well!

I made some kick ass chicken tortilla soup today. I'd post a photo but it just looks like soup. Ha! Very good.
 
Southwest pork Green chile.

Pork Green Chili

Ingredients:
2 lbs. pork tenderloin, cubed
1 coarsely chopped onion
1 14 oz. Swanson chicken broth
1 16 oz. jar of 505 diced green chilies < We live in TX so we buy from this company online.
1 16 oz. jar of 505 green chili sauce
3 tsps. minced garlic
3 tsps. chicken granules
3 tsps. celery salt
1 tbsp. flour


Start with 4 thick center cut boneless pork loin chops. Trim off all the fat and silver skin them cube it into small cubes roughly ¼” x ¼”.

Brown the pork then combine the chicken broth and chopped onion in with the browned pork. Let this simmer on low for an hour. Make sure not to boil all the liquid out.

After an hour combine the rest of the ingredients and let it simmer for at least another hour. After that chow down!

The longer it cooks the better it is!

There are several ways you can serve it up. Of course you can just eat it in a bowl with some sweet cornbread, or you can put some in a flour tortilla, fold it over, put a little chili on top with melted cheese, tomatoes, and a little sour cream.

We like ours hot!
