Was going to smoke it but decided to use the charcoal grill. Threw a couple pieces of hickory in the coals when it started to get a little smoke flavor.

Should be ready soon.

Every few months or so I’ll get a craving for menudo. It’s definitely not a weekly dish in our house either.
