Smoking some pulled pork with hickory pellets today. Going to try making an east Caralina tangy sauce.
Why a shoulder and not a butt?
The shoulder has the bone and fat under the skin to render down to make the pulled pork.
Negative ghost rider. The butt is a better cut for pulled pork. Although I only cook maybe once a month so I could be wrong. :crazyeyes:

Did not say it was better just answering your question from my opinion. I prefer the butt because there is not the shoulder bone which yellow more pulled pork.
Do you eat out alot? Cooking only once a Month?
Yeah, we use a blend of garlic salt and fresh ground pepper and season them the night before. Then low and slow, for a little over an hour, turning often.
Wood is far better than charcoal. We like to use Red Oak, but had to settle with charcoal for this event.
