Nice day for grilling…white king salmon, with compound butter, Okinawan sweet potato. 5% of king (Chinook) salmon have an aberration in the dna that doesn’t allow them to absorb the pink/orange pigmentation from krill and shrimp they feed on as smolts
While I do have hickory planks for longer cooks, this was a cedar plank...well soaked, barely got singed until the fish was 130 and perfect...it is primarily for indirect heat. I added a couple small chunks of applewood for smoke...is that a cedar plank?
Does it add any flavor or just keeps it off the grill and direct heat
