There’s such a thing as good grits?

Hell ya! Shrimp & Grits is one of my favorites but no one up here makes them worth a damn, unless you can find a southern transplant that opened a diner or such up here. And forget about the locals having them on the menu - they're bland & watery slop. Have to make them yourself.
 
Trying the super simple recipe today
Onions,cherry tomatos, olives,capers,basil, mint, salt and paper. In this order into the skillet. Add water or 50x50 water and vegetable broth. Half boiled potatos in, simmer for a few minutes.
Fish in. Any fish you like. A few more minutes under the lead and done.
