How were the taco shells? Recipe? I was looking at making some plantain tortillas but ran out of time this weekend.

Super easy, if you have something to slice the jicama thin and uniform, it will be easier. I just used a sharp knife and my not so steady hand. But the carnitas were the bomb! It was a hit for the fam.

That's the bird I did the other day. Spatchcock chicken on the Big Green Egg. Indirect cooking with 3 beers and a chopped onion in the drip tray below the bird. Rubbed with olive oil and your favorite seasoning. Juicy, crispy skin, a hint of smoke. Perfection.

Cut fish
Cut avocado
Serve pre-made salad from whole foods.

Normally we make our own salad, but our WF has a paleo section in the salad section and I was there buying other stuff and this looked good.
