One of my client’s chefs opened me up to beef tongue. Was very stand-off to it at first, so I made my assistant try it first 🤪

haha, I've had lengua a couple times that was a little rough (authentic?) - they didn't take the skin off the thing so you could see & feel the rough texture. Lol, I like it much better skinned

I don't think leaving the skin on is authentic. lol I think its just stupid people. I have never heard of anyone leaving it on.
