I thought about making Baba Ganoush...

Baba Ganoush is the best. I was going to make Italian eggplant in meat sauce with the one I bought, but you have me second guessing.

I recently found a couple of hole in the wall places in Vegas that were delicious BTW. One of the benefits of travel sports. Summerlin, but not too bad of a drive for you.

Eggplant is best grilled to give it that Smokey flavor…
