A skirt stake might be a stake used to fashion said skirt In place, or up!

A skirt steak is from the diaphragm area. Hangar steak is also I believe.
I'm not a butcher, but skirt, flank, and rib eye are my favs!
Oh and flank is great for jerky. It's all I use.

The messed up thing about it is that flank is a really cheap cut of meat but very good if done right and the prices on it have sky rocketed in the last couple years because of people finding out about it. It is great for carne asada. :thumb:
