Grilled octopus
Most restaurants will cook it a long time sous vide in olive oil & herbs, then char it on a grill. I like to marinate in teriyaki and grill over hot coals, then slice very thin…I tried cooking octopus once and it was the most godawful thing I've ever made. I actually spit it out. The texture was just so unlike anything I've ever eaten. Local monger told me I didn't boil it first. IDK if I'll ever make it myself again, but it's delicious in a restaurant
