I like that idea! I've still got a half a smoked chicken in the freezer that I need to do something with. We've already used leftovers to make nachos, and green chile enchiladas.

It's black tip. One of our firefighters caught it off of the coast.

And as far as cooking it, we are doing the best we can! LoL. We are frying it, grilling it, and smoking it.

Crusted salmon with an orange, mango, soy, ginger sauce, yellow and butternut squash hash and jasmine rice. It was a hit with the fam.

My daughter can be a picky eater, but she loves salmon, so I usually buy in bulk at Sam's/Costco. Saved some uncooked from yesterday and tonight made another fam fav. Salmon tacos. Here's a pic of the filling.

Figured if I'm out sick might as well make a good lunch. Leg of lamb with Merlot cream and mushroom reduction with a glass of Merlot. I love mushrooms so I always go heavy on them.
