Roast cooked a little too long, but good flavor.

Served with some bacon, mushroom, cauliflower "risotto" and a Cabernet.

Brine is cooked and now chilling. Will be using on a pork tenderloin for tomorrow and possibly some chicken for Xmas dinner.

I also have a nesco / American harvest dehydrator, and it works awesome! Inexpensive and reliable.
