Reverse seared. Grass fed grass finished from a local (WV) closed herd. Bought the whole steer. Steaks are next level great as are all we’ve had so far. Still need to make bone broth wit the bones and need to render the tallow, but it’s been to damn hot to use the stove all day.
Grilled chicken breast, greek herbs marinade. Experimenting with some honey balsamic dressing and Gorgonzola on the chicken.
Refreshing beet salad on the side!!! Oh and some smoked salt!!
Nice day for grilling…white king salmon, with compound butter, Okinawan sweet potato. 5% of king (Chinook) salmon have an aberration in the dna that doesn’t allow them to absorb the pink/orange pigmentation from krill and shrimp they feed on as smolts
