It's hard to judge which trails would fit you and your family best. I'd suggest checking out the Red Rock 4-wheelers trail ratings and descriptions. I also highly suggest the Charles Wells book on Moab. It's awesome. As for safety equipment I'd say the top things on your list should be water and a first aid kit. I really don't remember if you have cell service out there or not, never paid attention. One of the reasons I go on trips like that in the first place. But a CB isn't a bad thing to have in the jeep, not just for Moab.
