Today I upgraded from highway tires (245/70 or 75/17) to BFG KM3's (285/70/17) and I trimmed the splash guard. Used a dremel with a metal cutting bit, worked well. Thought I'd have to smooth it out with some 600 grit but I'm happy enough with it. I can post pic of bit if anyone wants it.
With the tires I've noticed no rubbing driving to and from shop, even with fenders not trimmed. Have yet to take it off road. I also want to crawl under it while someone goes lock to lock to double check rubbing but so far so good. The shop didn't want to put the spare on the hanger, cited clearance issues but I put it on and it fits good enough. Any bigger of a tire, it won't fit on stock tire carrier.
