MS to NM road trip suggestions

Planning a road trip in early August from Jackson, Ms to Albuquerque, NM. Looking for suggestions on sights to see, trails to ride, etc.
 
Thinking I'm gonna pull my tramp stamp and 35s off and remount my Rubicon take offs for the trip so that I can have a full sized spare available.
 
Never been there, but on my list of places to check out... Palo Duro State Park and the big steakhouse in Amarillo, TX.

In Albuquerque try the Sandia Peak Tramway and Petroglyph National Monument. Make the trip to Santa Fe. Lots of stuff to do there too.
 
Albuquerque is cool, but It's definitely worth driving an hour north of Albuquerque to visit Jemez, NM. Beautiful scenery and with hot springs. The Valles Caldera Preserve is a little further in Jemez and is worth checking out.
 
The dwellings in Taos are are sight to see. Ruidoso is beautiful. Capitan NM is home of Smokey the Bear. If you want to make the trip, Carlsbad Caverns is awesome, and of course Roswell is a quirky and fun place to visit.

And if you don't have a full size spare, I would definitely do this. I don't carry my spare in the Jeep locally because I can always just have my wife bring it to me if I get a flat. Any trip not local the spare gets mounted back up. Any reason you don't want to mount the 35 on the stock carrier? Get the day star bump stops for your tailgate and you'll be fine. Just curious.

Bought my Jeep used. It came with chrome wheels and 31" all terrains. I ended up trading them for a set of four 35s, so i don't have a 35" spare.

However, I do have a full set of Rubicon take offs and an EXTRA spare (wheel doesn't match but tire does)...I have a front receiver hitch, so i could actually get a hitch carrier and bring two full sized spares if I wanted.
