Accelerator issues

I've been battling an issue and trying to figure it out.
If I crusie a steady speed my engine drips to idle and my pedal doesn't respond. If I cycle my key everything goes back to normal.

I'm not getting any codes

I replaced the pedal assembly after hooking to a scanner and watching live feed and when It happens the accelerator pedal position sensor doesn't respond. I figured that meant it was the pedal.
Has anyone heard anything like this happening?
 
Posting in case someone ever runs into this. I found my issue after almost 2 months of searching.

I installed the JK8 MC/booster when I did the axle swap. Apparently I didn't get the plug secured in my brake pedal and it had worked loose not making a good connection. Which caused the jeep to go into a limp mode that only allowed idle.
